Fresh Mint Dressing

Ingredients

  • ½ cup extra-virgin olive oil
  • ½ cup lemon juice (about 2 lemons)
  • ¼ cup packed fresh mint leaves (spearmint)
  • 3 tablespoons honey or maple syrup
  • 1 tablespoon Dijon mustard
  • 2 cloves garlic, roughly chopped
  • ¼ teaspoon fine sea salt
  • 10 twists freshly ground black pepper

Instructions

  1. Combine all ingredients in a food processor.
  2. Blend until smooth.
  3. Taste and adjust salt and pepper if necessary.
  4. Use as desired, and refrigerate for up to 1 week.
