Ingredients

The fish and marinade

  • 3 fillets tilapia
  • 3 Tbsp olive oil
  • 2 Tbsp fresh lemon juice
  • 1 Tbsp fresh parsley, minced
  • 1 clove garlic, minced
  • 1 tsp dried basil
  • 1 tsp black pepper
  • ½ tsp salt

Tacos

  • ¾ cup peach mango salsa
  • 6 tortillas corn
  • ½ cup fresh cilantro leaves

Instructions

  1. Marinate the tilapia fillets in a mixture of olive oil, lemon juice, parsley, garlic, basil, salt, and pepper for at least an hour.
  2. Preheat the grill on medium-high heat and lightly coat it with oil.
  3. Grill the tilapia fillets for about 3 to 4 minutes on each side until they are opaque and flake easily.
  4. Brush the tortillas with oil and grill them for about 20 seconds.
  5. Fill the warm tortillas with the grilled tilapia, add 2 tablespoons of peach mango salsa, and top with cilantro.
