Easy Fish Roll-Ups

Ingredients

The main ingredients

  • 1 tsp ghee
  • 1 cup water
  • 15 pieces asparagus spears
  • 3 small wild-caught fillets of sole
  • to taste salt
  • to taste freshly ground black pepper

Optional garnish

  • to taste freshly squeezed lime or lemon juice
  • to taste balsamic vinegar

Instructions

  1. Trim about an inch off the ends of the asparagus spears.
  2. Boil water in a medium non-stick pan, add salt, and blanch the asparagus for 20 to 30 seconds.
  3. Remove asparagus and set aside to cool.
  4. Pat the sole fillets dry and season with salt and pepper.
  5. Place 5 asparagus spears on each fillet and roll them up.
  6. Season the roll-ups with more salt and pepper.
  7. Melt ghee in the skillet over medium heat and add the roll-ups.
  8. Cover and cook for 2 to 3 minutes until the fish is opaque.
  9. Serve immediately with a side of slaw or fresh greens, garnished with lime or lemon juice and balsamic vinegar if desired.
