Easy Fish Roll-Ups

Instructions
- Trim about an inch off the ends of the asparagus spears.
- Boil water in a medium non-stick pan, add salt, and blanch the asparagus for 20 to 30 seconds.
- Remove asparagus and set aside to cool.
- Pat the sole fillets dry and season with salt and pepper.
- Place 5 asparagus spears on each fillet and roll them up.
- Season the roll-ups with more salt and pepper.
- Melt ghee in the skillet over medium heat and add the roll-ups.
- Cover and cook for 2 to 3 minutes until the fish is opaque.
- Serve immediately with a side of slaw or fresh greens, garnished with lime or lemon juice and balsamic vinegar if desired.
