Ingredients

  • 1-2 pound stew beef, cut in small pieces
  • ½-1 cup oil (Canola, Vegetable or Corn)
  • 1 medium yellow onion
  • 4 pieces roma tomatoes
  • 4 cloves peeled garlic
  • ¼ cup chopped parsley
  • 3-4 tablespoon celery leaves
  • ½-1 piece scotch bonnet pepper (optional)
  • 1-2 leaves basil
  • 1 teaspoon fresh thyme
  • 1 can tomato sauce (14 ounce)
  • ½ teaspoon curry powder
  • 1 teaspoon white pepper
  • 1-2 teaspoon smoked paprika
  • 1 tablespoon Maggie powder or beef bouillon powder
  • 1-2 pieces green onion, sliced
  • to taste salt

Instructions

  1. Boil beef with salt, pepper, and chopped onions until tender, reserving the stock.
  2. Brown the beef in oil for about 5-10 minutes, then set aside.
  3. Blend onions, tomatoes, garlic, parsley, celery, thyme, basil, and scotch bonnet pepper.
  4. Pour the blended mixture and tomato puree into the saucepan, add spices, and bring to a boil.
  5. Reduce heat and simmer for about 30 minutes, then return the browned beef and simmer for another 10-15 minutes.
  6. Stir frequently and add beef stock or water as needed to prevent sticking.
  7. Add green onions and adjust seasonings before serving.
