Simple Apple Chutney

Ingredients

  • 2 lbs. apples, peeled and diced
  • 1 medium yellow onion, finely diced
  • ¾ cup golden raisins
  • ¾ cup red wine vinegar
  • 1 cup light brown sugar, packed
  • 1 tablespoon mustard seeds
  • teaspoons freshly grated ginger
  • ¾ teaspoon kosher salt
  • ¼–½ teaspoon crushed red pepper flakes
  • 1 each lemon, grated zest and juice

Instructions

  1. Combine all ingredients in a large, nonreactive pot.
  2. Bring to a boil over high heat, then reduce heat to low and cover the pot.
  3. Cook for 20 minutes.
  4. Uncover and raise heat to medium, adjusting as necessary to maintain a simmer.
  5. Simmer for an additional 20-40 minutes until chutney thickens and darkens.
  6. Optional: Purée the chutney in a food processor to a coarse thickness.
  7. Transfer chutney to a jar and store in the fridge for 1-2 weeks, or process in a boiling water bath for canning.
