Simple Apple Chutney
Ingredients

apples, peeled and diced

yellow onion, finely diced

golden raisins

red wine vinegar

light brown sugar, packed

mustard seeds

freshly grated ginger

kosher salt

crushed red pepper flakes

lemon, grated zest and juice
Instructions
- Combine all ingredients in a large, nonreactive pot.
- Bring to a boil over high heat, then reduce heat to low and cover the pot.
- Cook for 20 minutes.
- Uncover and raise heat to medium, adjusting as necessary to maintain a simmer.
- Simmer for an additional 20-40 minutes until chutney thickens and darkens.
- Optional: Purée the chutney in a food processor to a coarse thickness.
- Transfer chutney to a jar and store in the fridge for 1-2 weeks, or process in a boiling water bath for canning.
