Zhoug Sauce

Ingredients

  • 4 cloves garlic
  • 3 whole jalapenos
  • 1 cup parsley (packed)
  • 1 cup cilantro (packed)
  • ½ tsp cumin
  • ½ tsp ground coriander
  • a dash cayenne
  • ½ tsp cardamom
  • a pinch sugar
  • ¾ tsp sea salt
  • 1 squeeze lime
  • ¼ cup extra virgin olive oil

Instructions

  1. Chop the garlic and jalapenos in a food processor.
  2. Add parsley, cilantro, cumin, coriander, cayenne, cardamom, sugar, salt, and lime juice, and pulse to combine.
  3. With the motor running, drizzle in the olive oil while scraping down the sides to achieve a smooth but slightly chunky sauce.
  4. Taste and adjust salt and seasonings, adding more cayenne if desired.
