Schug Sauce

Ingredients

Spices

  • 1 teaspoon coriander seeds
  • 1 teaspoon cumin seeds

Chilies and Aromatics

  • ½ cup seeded and roughly chopped fresh hot green chilies
  • 2 to 3 cloves garlic

Herbs

  • 2 cups lightly packed cilantro leaves and stems
  • 2 cups lightly packed flat-leaf parsley leaves and stems

Other Ingredients

  • 1 zest lemon
  • 3 tablespoons lemon juice
  • ½ cup extra-virgin olive oil
  • to taste salt and freshly cracked black pepper

Instructions

  1. Toast the cumin and coriander seeds in a skillet until fragrant, then grind them.
  2. Pulse the chilies and garlic in a food processor until fine.
  3. Add cilantro, parsley, lemon zest, ground spices, lemon juice, salt, and pepper to the processor and pulse until finely chopped.
  4. Drizzle in the olive oil while the processor runs, stopping before completely smooth to maintain some texture.
  5. Taste and adjust seasoning with more salt, pepper, or lemon juice if needed.
