Zhoug! (Spicy Cilantro Sauce)

Ingredients

  • 4 cloves garlic
  • 2 cups fresh cilantro
  • 4 medium jalapeños
  • 1 teaspoon fine sea salt
  • 1 teaspoon ground cardamom
  • ¾ teaspoon ground cumin
  • ½ teaspoon red pepper flakes
  • ¾ cup extra-virgin olive oil

Instructions

  1. Process the garlic in a food processor until finely chopped.
  2. Add cilantro, jalapeños, salt, cardamom, cumin, and red pepper flakes to the processor and blend until finely chopped.
  3. While blending, slowly drizzle in the olive oil and continue until mostly smooth.
  4. Adjust the spiciness by adding jalapeño seeds or red pepper flakes if desired, and blend again.
  5. Let the sauce chill in the fridge for an hour to allow flavors to mellow.
