Peanut Lime Cauliflower Salad

Instructions
- Heat a skillet over medium heat and add the oil, swirling to coat the surface.
- Add the riced cauliflower and a pinch of salt, sautéing for about 5 minutes until tender.
- Transfer the cauliflower to a bowl to cool.
- In a small bowl, squeeze lime juice and mix with ginger, soy sauce, and chili garlic sauce.
- Finely dice the red bell pepper and red onion, chop the cilantro leaves, and roughly chop the peanuts.
- Combine the cooled cauliflower with the bell pepper, onion, cilantro, and peanuts in a bowl.
- Pour the dressing over the salad and toss to combine. Serve immediately or refrigerate until ready to eat.
