Ingredients

  • 3 cups riced cauliflower
  • 1 Tbsp coconut oil (or a neutral oil)
  • 1 pinch salt
  • 1 tsp freshly grated ginger
  • 1 fresh lime (2 Tbsp juice)
  • ½ Tbsp soy sauce
  • ½ Tbsp chili garlic sauce
  • 1 red bell pepper
  • ¼ red onion
  • ½ cup chopped peanuts
  • 1 cup fresh cilantro leaves

Instructions

  1. Heat a skillet over medium heat and add the oil, swirling to coat the surface.
  2. Add the riced cauliflower and a pinch of salt, sautéing for about 5 minutes until tender.
  3. Transfer the cauliflower to a bowl to cool.
  4. In a small bowl, squeeze lime juice and mix with ginger, soy sauce, and chili garlic sauce.
  5. Finely dice the red bell pepper and red onion, chop the cilantro leaves, and roughly chop the peanuts.
  6. Combine the cooled cauliflower with the bell pepper, onion, cilantro, and peanuts in a bowl.
  7. Pour the dressing over the salad and toss to combine. Serve immediately or refrigerate until ready to eat.
