Best Ever Vegan Breakfast Potatoes

Instructions
- Preheat a skillet to medium heat or an electric skillet to 350°F (176°C).
- Microwave the potatoes for 4-6 minutes, flipping halfway, until slightly soft, or bake in a 400°F (204°C) oven for 20-35 minutes until soft.
- Cut the cooked potatoes into bite-sized pieces.
- Melt vegan butter in the hot skillet, adding 1 Tbsp at a time to accommodate all potatoes.
- Place the potato pieces in the skillet, ensuring cut sides touch the butter.
- Spray the top with oil and season with half of the seasonings.
- After about 4 minutes, flip the potatoes to brown evenly.
- After another 3-4 minutes, flip them skin side down and season with remaining salt, pepper, and garlic powder.
- Cook for another 2-4 minutes until crispy and golden brown on all sides.
- Serve with hot sauce or your choice of condiment.
