Ingredients

The soup

  • 1 lb ground meat (beef, lamb, turkey, chicken, or vegan ground meat)
  • 1 each onion, diced
  • 1 teaspoon salt
  • 4–8 cloves garlic, chopped
  • 1 tablespoon fresh ginger, grated
  • ¼ teaspoon chili flakes
  • ¼ teaspoon black pepper (or ⅛ teaspoon white pepper)
  • 1 each red bell pepper, chopped
  • 2 stalks celery, diced
  • ½ large head cabbage, diced
  • 6 cups broth (chicken, beef, or veggie)
  • 3 tablespoons rice vinegar
  • 3 tablespoons soy sauce
  • 1 tablespoon toasted sesame oil
  • ½ cup scallions, sliced
  • to taste sriracha or red chili paste

Garnish

  • scallions or cilantro
  • sesame oil
  • sesame seeds

Instructions

  1. Prep the vegetables by chopping the onion, garlic, ginger, celery, bell pepper, and cabbage.
  2. Brown the ground meat with onion and salt in a pot.
  3. Add garlic, ginger, chili flakes, and black pepper, and sauté for a few minutes.
  4. Incorporate the bell pepper, celery, and cabbage, then add the broth and bring to a simmer.
  5. Simmer for about 10 minutes until the cabbage softens.
  6. Season the soup with rice vinegar, soy sauce, sesame oil, and adjust flavors with sriracha if desired.
  7. Garnish with scallions or cilantro, sesame seeds, and a drizzle of sesame oil before serving.
