The Gravy

Instructions
- Allow the steak to come to room temperature for about 30 minutes.
- Season the steak with smoked paprika, garlic powder, salt, and pepper.
- Heat a skillet or grill pan on medium-high heat with olive oil.
- Sear both sides of the steak for 3-4 minutes, ensuring the edges are seared.
- Remove the steaks from the pan and set aside, reserving the drippings.
- Add sliced onions and green peppers to the pan and sauté until soft.
- Remove the vegetables and set aside with the steak.
- Add butter and olive oil to the skillet and melt.
- Stir in flour to create a roux, then gradually add broth, cream, and garlic powder.
- Stir until the gravy thickens, then return the steaks and vegetables to the pan.
- Serve the steak smothered in gravy.
