Ingredients

The Steak

  • 2 steaks NY Strip, Ribeye, Sirloin, etc (8-10oz each)
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • to taste salt
  • to taste pepper
  • 1 teaspoon olive oil
  • ½ cup chopped green peppers
  • ½ cup chopped or sliced onions

The Gravy

  • 1 tablespoon unsalted butter
  • 1 tablespoon olive oil
  • 2 tablespoons flour
  • ¾-1 cup chicken broth
  • ¼ cup heavy whipping cream or half and half
  • ½ teaspoon garlic powder

Instructions

  1. Allow the steak to come to room temperature for about 30 minutes.
  2. Season the steak with smoked paprika, garlic powder, salt, and pepper.
  3. Heat a skillet or grill pan on medium-high heat with olive oil.
  4. Sear both sides of the steak for 3-4 minutes, ensuring the edges are seared.
  5. Remove the steaks from the pan and set aside, reserving the drippings.
  6. Add sliced onions and green peppers to the pan and sauté until soft.
  7. Remove the vegetables and set aside with the steak.
  8. Add butter and olive oil to the skillet and melt.
  9. Stir in flour to create a roux, then gradually add broth, cream, and garlic powder.
  10. Stir until the gravy thickens, then return the steaks and vegetables to the pan.
  11. Serve the steak smothered in gravy.
