Ingredients

The steak

  • lb cube steaks
  • ½ teaspoon salt
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon dry mustard
  • ½ teaspoon sweet paprika
  • ½ teaspoon chili powder
  • ¼ teaspoon black pepper
  • 3 tablespoons all-purpose flour
  • 2 tablespoons olive oil

The onion gravy

  • 2 cups sweet onion, thinly sliced
  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 2 cups beef broth
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • teaspoon black pepper, to taste
  • 2 teaspoons Worcestershire sauce
  • 1 teaspoon Dijon mustard or spicy brown mustard

Instructions

  1. Combine salt, garlic powder, onion powder, paprika, dry mustard, chili powder, and black pepper in a bowl and whisk to combine.
  2. Pound the cube steaks to ½ inch thickness using a meat mallet, then rub the seasoning blend on both sides.
  3. Dredge the seasoned steaks in flour, shaking off excess.
  4. Heat olive oil in a skillet over medium-high heat and sear the steaks for 2-3 minutes on each side.
  5. Remove the steaks and tent with foil to keep warm.
  6. In the same skillet, reduce heat to medium, add butter, and sauté sliced onions for 15-18 minutes until caramelized.
  7. Lower the heat and stir in flour, cooking for 2-3 minutes.
  8. Add beef broth, Worcestershire sauce, mustard, and seasonings to the onions, mixing to create gravy and simmer until thickened.
  9. Return the steaks to the pan, spoon gravy over them, and simmer uncovered for 5 minutes until cooked through.
  10. Serve with mashed potatoes and green beans.
