Ingredients

The steak

  • 2 pounds cube steak
  • 2 teaspoons Cajun seasoning

The breading

  • ¾ cup all-purpose flour
  • ¼ cup cornstarch
  • 1 teaspoon paprika
  • 2 teaspoons onion powder
  • 2 teaspoons garlic powder
  • ¼ teaspoon cayenne pepper
  • 1 teaspoon black pepper
  • ½ teaspoon dried thyme
  • 1 teaspoon dried parsley
  • Milk for coating

The gravy

  • ¼ cup all-purpose flour
  • 3 cups whole milk
  • Salt and pepper to taste

Instructions

  1. Pat the steaks dry and pound them to an even thickness of ⅛-¼ inch, then season with Cajun seasoning.
  2. Whisk together the flour, cornstarch, and spices in a bowl.
  3. Dredge the steaks in the flour mixture, then dip in milk, and coat again in the flour mixture.
  4. Heat oil in a skillet to 350°F and fry the steaks for 2-3 minutes on each side until golden brown.
  5. Remove the steaks and set them on paper towels to drain excess oil.
  6. For the gravy, pour out excess oil, leaving drippings in the pan, and whisk in flour to form a roux.
  7. Slowly add milk while stirring to avoid lumps, then simmer until thickened.
  8. Serve the gravy over the fried steaks, garnished with parsley if desired.
