Instructions
- Pat the steaks dry and pound them to an even thickness of ⅛-¼ inch, then season with Cajun seasoning.
- Whisk together the flour, cornstarch, and spices in a bowl.
- Dredge the steaks in the flour mixture, then dip in milk, and coat again in the flour mixture.
- Heat oil in a skillet to 350°F and fry the steaks for 2-3 minutes on each side until golden brown.
- Remove the steaks and set them on paper towels to drain excess oil.
- For the gravy, pour out excess oil, leaving drippings in the pan, and whisk in flour to form a roux.
- Slowly add milk while stirring to avoid lumps, then simmer until thickened.
- Serve the gravy over the fried steaks, garnished with parsley if desired.
