Ingredients

The steak

  • 1 ½ pounds cube steaks
  • 1 cup whole milk or buttermilk
  • 1 ½ teaspoons sea salt
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 2 sleeves crushed saltine crackers
  • 1 ½ cups all-purpose flour

The gravy

  • ¼ cup unsalted butter
  • cup all-purpose flour
  • 1 ½ cups milk
  • ¾ teaspoon salt
  • ½ teaspoon freshly ground black pepper

Instructions

  1. Place the cube steaks in a shallow dish.
  2. Combine milk, salt, paprika, and garlic powder in a large measuring cup.
  3. Pour the mixture over the steaks and let sit for at least 30 minutes or refrigerate overnight.
  4. Combine crushed saltine crackers and flour in a shallow dish.
  5. Remove steaks from the milk mixture and coat with the cracker and flour mixture.
  6. Press gently to help the coating adhere and repeat with remaining steaks.
  7. Preheat the air fryer to 350°F.
  8. Cook the steaks in a single layer for 12 to 16 minutes until the meat reaches 160°F and is brown and crisp.
  9. While the steaks are cooking, melt butter in a saucepan, add flour, and whisk until browned.
  10. Gradually add milk, whisking until fully incorporated, and season with salt and pepper.
