Instructions
- Preheat the oven to 200°F and prepare baking sheets with parchment or foil.
- In a shallow bowl, mix flour, cayenne pepper, salt, and pepper.
- In another bowl, whisk the egg with baking powder, baking soda, and buttermilk.
- Dry the steaks and season with salt and pepper, then coat in the flour mixture, dip in the egg mixture, and dredge in flour again.
- Heat oil in a Dutch oven to 375°F and fry the steaks in batches until golden brown, about 5 to 7 minutes.
- Transfer fried steaks to a wire rack in the oven to keep warm.
- For the gravy, reserve some oil from the frying pan and sauté onion, garlic, and thyme until softened.
- Whisk in flour and cook for a minute, then add chicken broth and milk, stirring until thickened.
- Season the gravy with cayenne, salt, and pepper to taste.
- Serve the steaks warm topped with gravy and optionally with mashed potatoes.
