Ingredients

The steak

  • 1 pound cube steaks
  • 1 cup blanched almond flour
  • ½ cup grated parmesan cheese
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • to taste salt
  • to taste pepper
  • ¼ cup heavy whipping cream
  • 2 large eggs
  • ¼ cup avocado oil
  • 2 tablespoons unsalted butter

The gravy

  • 1 cup heavy whipping cream
  • ½ teaspoon xanthan gum
  • 4 ounces ground breakfast sausage (optional)
  • to taste salt
  • to taste pepper

Instructions

  1. Prepare two bowls: one with almond flour, parmesan cheese, and spices; the other with whisked eggs and heavy cream.
  2. Dredge the cube steaks in the almond flour mixture, then in the cream and eggs, and back into the almond flour.
  3. Heat a skillet with avocado oil and melted butter over medium-high heat.
  4. Fry the cube steaks for about 3 minutes on each side until crispy.
  5. Remove the steaks and lower the heat to medium.
  6. For the gravy, add heavy cream, salt, and pepper to the pan, stirring continuously.
  7. Mix xanthan gum with a small amount of gravy, then add back to the pan and stir until thickened.
