The gravy

Instructions
- Prepare two bowls: one with almond flour, parmesan cheese, and spices; the other with whisked eggs and heavy cream.
- Dredge the cube steaks in the almond flour mixture, then in the cream and eggs, and back into the almond flour.
- Heat a skillet with avocado oil and melted butter over medium-high heat.
- Fry the cube steaks for about 3 minutes on each side until crispy.
- Remove the steaks and lower the heat to medium.
- For the gravy, add heavy cream, salt, and pepper to the pan, stirring continuously.
- Mix xanthan gum with a small amount of gravy, then add back to the pan and stir until thickened.
