Ingredients

The Chicken

  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • ¼ teaspoon black pepper
  • 2 large eggs
  • ½ cup buttermilk
  • vegetable oil for frying

The Country Gravy

  • 3 tablespoon fryer oil or butter
  • 3 tablespoon all-purpose flour
  • 1 cup milk
  • ½ cup chicken broth
  • salt and black pepper to taste

Instructions

  1. Trim chicken breasts of any fat or skin and pound them thin.
  2. Prepare the seasoned flour by mixing flour, baking soda, baking powder, garlic powder, salt, and black pepper in a shallow bowl.
  3. In another bowl, whisk together eggs and buttermilk.
  4. Dredge the chicken in the flour mixture, then dip in the egg mixture, and coat with the flour again.
  5. Heat vegetable oil in a skillet over medium-high heat until it reaches 325-350°F.
  6. Cook the chicken for 5-7 minutes per side until golden brown and crispy, ensuring it reaches an internal temperature of at least 165°F.
  7. Remove the chicken and let it drain on a wire rack or paper towels, reserving some oil for the gravy.
  8. For the gravy, mix reserved oil and flour in a pot and cook over medium-low heat for 2 minutes.
  9. Add milk to the roux and whisk until thickened, then add chicken broth and simmer for 3-4 minutes.
  10. Season the gravy with salt and black pepper to taste and serve over the fried chicken.
