Instructions
- Trim chicken breasts of any fat or skin and pound them thin.
- Prepare the seasoned flour by mixing flour, baking soda, baking powder, garlic powder, salt, and black pepper in a shallow bowl.
- In another bowl, whisk together eggs and buttermilk.
- Dredge the chicken in the flour mixture, then dip in the egg mixture, and coat with the flour again.
- Heat vegetable oil in a skillet over medium-high heat until it reaches 325-350°F.
- Cook the chicken for 5-7 minutes per side until golden brown and crispy, ensuring it reaches an internal temperature of at least 165°F.
- Remove the chicken and let it drain on a wire rack or paper towels, reserving some oil for the gravy.
- For the gravy, mix reserved oil and flour in a pot and cook over medium-low heat for 2 minutes.
- Add milk to the roux and whisk until thickened, then add chicken broth and simmer for 3-4 minutes.
- Season the gravy with salt and black pepper to taste and serve over the fried chicken.
