Chicken Fried Chicken with Country Gravy

The Gravy

Instructions
- Pound the chicken breasts to an even thickness between two sheets of plastic wrap or parchment paper.
- Combine flour, smoked paprika, garlic powder, onion powder, salt, and pepper in a bowl.
- In another bowl, whisk together buttermilk and egg.
- Dredge the chicken in the flour mixture, then dip in the buttermilk mixture, and coat again in the flour.
- For air frying, spray the basket with oil, add the chicken, spritz with oil, and air fry at 400°F for 10 minutes, flipping halfway through.
- For pan frying, heat oil in a skillet to 325-350°F, fry the chicken for 5-7 minutes on each side until golden brown and cooked through.
- For the gravy, reserve pan drippings, melt butter, add flour to make a roux, then gradually stir in milk until thickened.
- Season the gravy with garlic powder, salt, and pepper to taste.
