Ingredients

The Chicken

  • pounds boneless skinless chicken breasts
  • 1 cup all-purpose flour
  • 1 teaspoon smoked paprika
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • to taste salt
  • to taste pepper
  • ½ cup buttermilk
  • 1 egg egg
  • as needed cup oil for skillet frying

The Gravy

  • 2 tablespoons oil drippings from the pan
  • 2 tablespoons unsalted butter
  • 2 tablespoons flour
  • 1-1½ cups milk or half and half
  • ½ teaspoon garlic powder (optional)
  • to taste salt
  • to taste pepper

Instructions

  1. Pound the chicken breasts to an even thickness between two sheets of plastic wrap or parchment paper.
  2. Combine flour, smoked paprika, garlic powder, onion powder, salt, and pepper in a bowl.
  3. In another bowl, whisk together buttermilk and egg.
  4. Dredge the chicken in the flour mixture, then dip in the buttermilk mixture, and coat again in the flour.
  5. For air frying, spray the basket with oil, add the chicken, spritz with oil, and air fry at 400°F for 10 minutes, flipping halfway through.
  6. For pan frying, heat oil in a skillet to 325-350°F, fry the chicken for 5-7 minutes on each side until golden brown and cooked through.
  7. For the gravy, reserve pan drippings, melt butter, add flour to make a roux, then gradually stir in milk until thickened.
  8. Season the gravy with garlic powder, salt, and pepper to taste.
