Ingredients

The meat and seasoning

  • 4 pieces Cube Steaks (about 6 oz each)
  • cup Flour
  • 1 teaspoon Kosher Salt
  • ½ teaspoon Pepper
  • 1 teaspoon Garlic Powder

The cooking fats and vegetables

  • 2 tablespoons Olive Oil
  • 2 tablespoons Butter, unsalted
  • 1 large Onion, cut in half and sliced thick

The liquids and soups

  • 1 (14 oz) can Beef Broth, low sodium
  • 1 (1 oz) packet Onion Soup Mix
  • 1 (10.5 oz) can Cream of Mushroom Soup, condensed (low sodium, if possible)

Instructions

  1. Mix the flour, salt, pepper, and garlic powder, then spread it out on a plate.
  2. Coat both sides of the cube steaks in the flour mixture and set aside.
  3. Turn on the Sauté setting and add the oil when hot.
  4. Brown two cube steaks on both sides, then repeat with the remaining two steaks. Set aside.
  5. Add butter and onion to the pot, cooking until softened, scraping the bottom to loosen browned bits.
  6. Stir in beef broth and scrape the bottom again.
  7. Return the cube steaks to the pot on top of the onions.
  8. Sprinkle onion soup mix over the steaks and spread cream of mushroom soup on top.
  9. Close the lid, set the steam release knob to Sealing, and turn off the sauté setting.
  10. Select Pressure Cook/Manual for 15 minutes on high pressure.
  11. After cooking, let the pot sit for 10 minutes for natural release, then release remaining steam.
  12. Open the lid and remove the cube steaks to a platter.
  13. Stir the onion gravy, thickening if necessary with a cornstarch slurry.
  14. Serve the dish over mashed potatoes, rice, or cauliflower.
