Ingredients

Dry Ingredients

  • 2 ½ cups rolled oats
  • 1 ⅓ cups gluten free flour
  • 1 ½ tsp cinnamon
  • ½ tsp nutmeg
  • 1 tsp salt

Wet Ingredients

  • 1 cup pure maple syrup
  • 1 tsp vanilla extract
  • ½ cup melted coconut oil
  • 2 tbs flaxseed meal
  • ¼ cup water

Optional Ingredients

  • cup raisins

Instructions

  1. Preheat the oven to 350°F.
  2. Mix flaxseed meal and water in a small bowl and set aside to thicken.
  3. In a medium bowl, combine rolled oats, gluten free flour, cinnamon, nutmeg, and salt.
  4. In a large bowl, mix maple syrup, vanilla extract, melted coconut oil, and the flaxseed mixture.
  5. Add the dry ingredients to the wet ingredients and stir until combined. If using, fold in raisins.
  6. If the dough is too sticky, refrigerate for 5 to 10 minutes.
  7. Drop heaping tablespoon-sized portions of dough onto a baking sheet.
  8. Bake for 12 to 14 minutes until set and lightly browned.
  9. Cool on a wire rack before storing.
