Instructions
- Preheat the oven to 350°F.
- Mix flaxseed meal and water in a small bowl and set aside to thicken.
- In a medium bowl, combine rolled oats, gluten free flour, cinnamon, nutmeg, and salt.
- In a large bowl, mix maple syrup, vanilla extract, melted coconut oil, and the flaxseed mixture.
- Add the dry ingredients to the wet ingredients and stir until combined. If using, fold in raisins.
- If the dough is too sticky, refrigerate for 5 to 10 minutes.
- Drop heaping tablespoon-sized portions of dough onto a baking sheet.
- Bake for 12 to 14 minutes until set and lightly browned.
- Cool on a wire rack before storing.
