Chewy Vegan Oatmeal Cookies

Ingredients

  • ½ cup vegan butter
  • 1 cup brown sugar
  • 2 units flax eggs
  • 1 ½ cups old-fashioned rolled oats
  • 1 cup all-purpose flour
  • 2 teaspoons baking soda
  • ½ teaspoon ground cinnamon
  • ½ teaspoon sea salt
  • 1 teaspoon vanilla extract
  • 1 tablespoon pure cane molasses
  • ¾ cup raisins

Instructions

  1. Prepare a baking sheet with silicone mats or parchment paper.
  2. Sift the flour, baking soda, cinnamon, and sea salt together in a bowl.
  3. Cream the vegan butter and brown sugar in a separate bowl for 3 minutes, then add the flax eggs and vanilla extract and mix until creamy.
  4. Gradually mix in the dry ingredients in two batches, then fold in the molasses, oats, and raisins.
  5. Cover the dough and chill in the refrigerator for 1 hour.
  6. Preheat the oven to 350°F (180°C) during the last 15 minutes of chilling.
  7. Scoop 2 tablespoons of dough, roll into balls, and place on the baking sheet with space between each.
  8. Bake for 12 to 14 minutes, then cool on the baking sheet for 5 to 10 minutes before transferring to a wire rack.
