Ingredients

The brownies

  • 1 cup old fashioned rolled oats (or oat flour)
  • 1 15 oz can chickpeas (liquid included)
  • ½ cup milk of choice
  • cup oil (canola recommended)
  • 1 tsp apple cider vinegar
  • 1 tsp vanilla extract
  • ½ cup unsweetened cocoa powder
  • ¼ cup cornstarch
  • ¼ cup granulated sweetener of choice
  • 1 Tbsp granulated sweetener of choice
  • ¾ tsp baking powder
  • ¾ tsp baking soda
  • ¼ tsp salt

The frosting

  • 1 cup hazelnuts
  • ¼ cup agave (or other sticky sweetener)
  • 2 Tbsp oil (canola recommended)
  • 1 Tbsp granulated sweetener of choice
  • ¼ tsp salt
  • ½ cup plain yogurt of choice (Greek recommended)

Instructions

  1. Preheat the oven to 325°F and prepare an 8x8 square pan.
  2. In a food processor, blend the oats and chickpeas until smooth.
  3. Add the milk, oil, apple cider vinegar, and vanilla extract to the blender and blend until incorporated.
  4. In a large bowl, whisk together the cocoa powder, cornstarch, sweetener, baking powder, baking soda, and salt.
  5. Combine the chickpea mixture with the dry ingredients and mix well.
  6. Pour the mixture into the prepared pan and bake for 28-29 minutes.
  7. For the frosting, blend hazelnuts, agave, oil, sweetener, and salt until smooth.
  8. Transfer the mixture to a bowl and whisk in the yogurt until fluffy.
  9. Chill the frosting for at least 1 hour to thicken.
  10. Once the brownies are cool, spread the frosting on top and enjoy.
