Ingredients

  • 1 teaspoon olive oil
  • 1 cup chopped onion
  • 2 cloves garlic
  • pounds skinless chicken breasts
  • to taste McCormick's Montreal Chicken Seasoning
  • to taste salt
  • to taste pepper
  • 2 tablespoons butter
  • ½ tablespoon xanthan gum
  • cups chicken broth
  • ¼ cup heavy whipping cream
  • 4 oz cream cheese
  • 15 oz frozen broccoli
  • 1 cup shredded cheddar cheese
  • ¼ cup shredded parmesan cheese

Instructions

  1. Preheat the oven to 350°F.
  2. Spray a 9x13 casserole dish with cooking spray.
  3. Heat a skillet on medium-high heat and add olive oil, onions, and garlic, cooking until fragrant.
  4. Add chicken cubes, season with spices, and cook until no longer pink.
  5. Remove chicken, onions, and garlic from the skillet and set aside.
  6. In the same skillet, melt butter and whisk in xanthan gum to create a roux.
  7. Pour in chicken broth and whisk to combine, then add cream cheese and heavy whipping cream.
  8. Cook until the mixture thickens, then stir in steamed broccoli.
  9. Combine the broccoli mixture with the chicken mixture in the casserole dish.
  10. Sprinkle shredded cheeses on top and bake for 18-22 minutes until bubbly.
  11. Cool before serving.
