Instructions
- Preheat the oven to 350°F.
- Spray a 9x13 casserole dish with cooking spray.
- Heat a skillet on medium-high heat and add olive oil, onions, and garlic, cooking until fragrant.
- Add chicken cubes, season with spices, and cook until no longer pink.
- Remove chicken, onions, and garlic from the skillet and set aside.
- In the same skillet, melt butter and whisk in xanthan gum to create a roux.
- Pour in chicken broth and whisk to combine, then add cream cheese and heavy whipping cream.
- Cook until the mixture thickens, then stir in steamed broccoli.
- Combine the broccoli mixture with the chicken mixture in the casserole dish.
- Sprinkle shredded cheeses on top and bake for 18-22 minutes until bubbly.
- Cool before serving.
