Ingredients

The tacos

  • 4 cups pork carnitas
  • 8 taco-sized tortillas flour or corn

Classic Tacos I

  • 1 cup diced cilantro
  • ½ cup finely diced white onion
  • 2 limes quartered

Classic Tacos II

  • 1 cup chopped tomatoes
  • 1 cup shredded cheddar cheese
  • ½ cup sour cream

Breakfast Tacos

  • 4 large eggs
  • 2 teaspoons milk
  • to taste salt
  • 1 cup salsa
  • 1 cup shredded cheddar cheese

Instructions

  1. Reheat the carnitas in the microwave if they are cold.
  2. Warm the tortillas in the microwave covered with a damp paper towel.
  3. For Classic Tacos I, layer each tortilla with ½ cup carnitas, cilantro, and white onion, then add a squeeze of lime juice.
  4. For Classic Tacos II, add ½ cup carnitas, tomatoes, shredded cheese, and sour cream to each tortilla.
  5. For Breakfast Tacos, whisk eggs and milk, scramble in a skillet, then top tortillas with ½ cup carnitas, scrambled eggs, salsa, and cheese.
