Bok Choy and Ginger Stir-Fry

Ingredients

  • 1 tablespoon coconut oil
  • 2 cloves garlic, chopped
  • 1 teaspoon grated ginger
  • 1 tablespoon low sodium soy sauce
  • 1 pound bok choy
  • to taste salt
  • to taste pepper
  • to taste toasted sesame seeds

Instructions

  1. Wash the bok choy in cold water and chop it, separating the stems from the leaves.
  2. Heat coconut oil in a large non-stick saucepan and add garlic and ginger, cooking until fragrant.
  3. Add bok choy stems, soy sauce, and a splash of water, cooking for 5 minutes.
  4. Once the stems are tender, add bok choy leaves and cook until wilted.
  5. Season with salt and pepper, and finish with toasted sesame seeds.
