Ingredients

The dough

  • 6 tablespoons unsalted butter
  • cup brown sweetener
  • 1 large egg
  • teaspoon fresh lemon juice
  • 1 teaspoon vanilla extract
  • cups blanched almond flour
  • ½ teaspoon baking soda
  • 1 teaspoon cinnamon
  • 2 teaspoons ground ginger
  • ¼ teaspoon salt

Add-ins

  • 1 cup white chocolate chips

Instructions

  1. Preheat the oven to 350°F.
  2. Cream the butter and brown sweetener together for about 2 minutes.
  3. Add the egg, vanilla, and lemon juice, mixing until light and fluffy.
  4. Incorporate half of the almond flour and mix.
  5. Add the remaining almond flour, baking soda, cinnamon, ginger, and salt, and beat until combined.
  6. Fold in the white chocolate chips.
  7. Roll the dough into balls and flatten slightly.
  8. Place on a lined baking sheet and bake for 10-15 minutes until golden brown.
  9. Cool on the baking sheet for 5 minutes before transferring to a cooling rack.
