Sugar-free Keto Gingerbread Cookies

Ingredients

  • 2 ¼ cups Wholesome Yum Blanched Almond Flour
  • 1 tbsp Cinnamon
  • 1 ½ tsp Ground ginger
  • ¼ tsp Ground cloves
  • ¼ tsp Nutmeg
  • ½ tsp Baking powder
  • tsp Sea salt
  • ½ cup Besti Brown Monk Fruit Allulose Blend
  • 3 tbsp Unsalted butter (softened)
  • 1 large Egg (at room temperature)
  • 1 tsp Vanilla extract

Instructions

  1. Mix dry ingredients in a medium bowl.
  2. Cream butter and sweetener in a large bowl until fluffy, then beat in egg and vanilla extract.
  3. Add the dry ingredients to the wet mixture and beat until a dough forms.
  4. Refrigerate the dough for at least 30 minutes.
  5. Preheat the oven to 350°F (177°C) and line a cookie sheet with parchment paper.
  6. Roll out the dough between two pieces of parchment paper to 1/4 inch thickness and cut out shapes.
  7. Bake for 10-15 minutes until golden on the edges, then cool on the cookie sheet.
