Instructions
- Mix dry ingredients in a medium bowl.
- Cream butter and sweetener in a large bowl until fluffy, then beat in egg and vanilla extract.
- Add the dry ingredients to the wet mixture and beat until a dough forms.
- Refrigerate the dough for at least 30 minutes.
- Preheat the oven to 350°F (177°C) and line a cookie sheet with parchment paper.
- Roll out the dough between two pieces of parchment paper to 1/4 inch thickness and cut out shapes.
- Bake for 10-15 minutes until golden on the edges, then cool on the cookie sheet.
