Ingredients

  • 12 oz fresh coconut meat
  • 200 grams blanched almond flour
  • 2 Tbsp raw honey
  • 2 tsp vanilla extract
  • ¾ cup dairy free chocolate chips
  • 2 Tbsp dried unsweetened coconut flakes (optional)

Instructions

  1. Blend coconut meat until finely chopped.
  2. Combine coconut with almond flour, honey, and vanilla in a bowl.
  3. Form the mixture into 30 gram balls and roll them to smooth the edges.
  4. Refrigerate the balls for about 1 hour to firm up.
  5. Skewer each ball onto a lollipop stick.
  6. Melt the chocolate chips and dip each pop to coat.
  7. Sprinkle with coconut flakes if desired.
  8. Allow the chocolate to harden before serving.
