Ingredients

The strawberry filling

  • 2 lbs fresh strawberries, hulled and quartered
  • 1 tbsp Bob's Red Mill tapioca flour
  • 1 tbsp pure maple syrup
  • ¼ tsp sea salt

The crumble topping

  • ½ cup blanched almond flour
  • ¼ cup maple sugar (or coconut sugar)
  • ¼ cup ghee, room temperature (or coconut oil for Vegan)
  • ¼ tsp sea salt
  • 1 cup pecans, chopped

Instructions

  1. Preheat the oven to 350°F.
  2. Prepare the strawberry filling by mixing strawberries, tapioca flour, maple syrup, and sea salt in a bowl.
  3. Transfer the filling to a baking dish.
  4. In the same bowl, combine almond flour, maple sugar, ghee, and sea salt to create the crumble topping.
  5. Mix until crumbly, then stir in the chopped pecans.
  6. Sprinkle the crumble topping over the strawberry mixture.
  7. Bake for 10-12 minutes until the strawberries are heated through but not mushy.
  8. Serve immediately, optionally with a scoop of vanilla coconut milk ice cream.
