Instructions
- Place the watermelon wedges on two plates and sprinkle with lime juice, salt, and chipotle powder.
- In a large bowl, combine cucumber noodles with remaining lime juice, salt, chipotle powder, olive oil, agave, arugula, mint, and basil, then toss to mix.
- Divide the cucumber noodles between the plates on top of the watermelon.
- Garnish with avocado, pumpkin seeds, and black pepper.
- Serve immediately with lime wedges if desired.
