Spicy Watermelon Salad

Ingredients

The salad

  • 3 cups watermelon, cut into 1-1½ inch cubes
  • 1 cup cucumber, cut into 1-inch chunks
  • ½ cup cherry or grape tomatoes, halved
  • ½ large ripe avocado, cut into ½-1 inch pieces (optional)
  • 1-2 Tbsp finely chopped Calabrian peppers
  • 3-4 Tbsp Creamy Turmeric Mango Vinaigrette

The garnish

  • 2-4 Tbsp chopped Marcona almonds
  • 2 pinches flaky sea salt
  • 1-2 sheets roasted seaweed snacks, crumbled (optional)
  • to taste sesame seeds (optional)

Instructions

  1. Prepare the Creamy Mango Turmeric Dressing if you haven't already.
  2. In a mixing bowl, combine watermelon, cucumber, cherry tomatoes, avocado, and chopped peppers, and toss gently.
  3. Choose to either drizzle the dressing over the salad on a serving platter or add it directly to the mixing bowl and toss to combine.
  4. Taste and adjust seasoning as needed.
  5. Divide the salad between serving plates and garnish with Marcona almonds, flaky sea salt, crumbled seaweed, and sesame seeds if using.
  6. Serve fresh and enjoy!
