COLD melon (watermelon, cantaloupe or honeydew, or a mix)

Turkish (or Persian) cucumbers, sliced

pickled shallots or pickled onions (optional, sub 1/4 cup thinly sliced red onion)

Instructions
- Prepare the Tomato Vinaigrette by charring the tomatoes in a skillet until softened, then blend with oil, vinegar, maple syrup, shallots, garlic, and basil.
- Refrigerate the vinaigrette and optionally prepare pickled shallots.
- In a large bowl, combine the melon, halved tomatoes, cucumber, radishes, and scallions.
- If serving immediately, gently fold in enough vinaigrette to coat the salad and half of the fresh basil.
- Adjust salt and vinegar to taste, then serve the salad on a platter topped with pickled shallots, avocado slices, torn basil, and pumpkin seeds.
