Ingredients

The Seitan

  • 2 cups vital wheat gluten
  • ¼ cup nutritional yeast
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon salt
  • ¼ teaspoon freshly ground black pepper
  • 7 cups vegetable broth
  • 2 tablespoons olive oil

The Vegan Buttermilk

  • 1 cup unsweetened soy milk
  • 2 teaspoons apple cider vinegar
  • ¼ cup all-purpose flour

The Breading

  • 1 cup all-purpose flour
  • ½ cup cornstarch
  • 1 teaspoon salt
  • ½ teaspoon freshly ground black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon oregano
  • ½ teaspoon cajun seasoning

For frying

  • as needed none neutral oil

Instructions

  1. Combine vital wheat gluten, nutritional yeast, garlic powder, onion powder, salt, and pepper in a large bowl.
  2. Slowly add 2 cups of vegetable broth and olive oil, stirring until a dough forms.
  3. Knead the dough, then divide it into two pieces.
  4. In a large pot, bring 5 cups of vegetable broth to a boil, then reduce to a simmer.
  5. Add the seitan to the pot, cover, and simmer for 25 minutes.
  6. Transfer the cooked seitan to a plate to cool.
  7. In one shallow bowl, mix the vegan buttermilk ingredients until combined.
  8. In another shallow bowl, mix all the breading ingredients until combined.
  9. Heat enough oil in a medium pot to submerge the tenders to 350°F.
  10. Break the cooled seitan into pieces resembling chicken tenders.
  11. Dip each piece in vegan buttermilk, then dredge in the flour mixture.
  12. Fry the breaded tenders until golden brown, then transfer to a cooling rack.
  13. Serve warm with dipping sauces.
