Instructions
- Combine vital wheat gluten, nutritional yeast, garlic powder, onion powder, salt, and pepper in a large bowl.
- Slowly add 2 cups of vegetable broth and olive oil, stirring until a dough forms.
- Knead the dough, then divide it into two pieces.
- In a large pot, bring 5 cups of vegetable broth to a boil, then reduce to a simmer.
- Add the seitan to the pot, cover, and simmer for 25 minutes.
- Transfer the cooked seitan to a plate to cool.
- In one shallow bowl, mix the vegan buttermilk ingredients until combined.
- In another shallow bowl, mix all the breading ingredients until combined.
- Heat enough oil in a medium pot to submerge the tenders to 350°F.
- Break the cooled seitan into pieces resembling chicken tenders.
- Dip each piece in vegan buttermilk, then dredge in the flour mixture.
- Fry the breaded tenders until golden brown, then transfer to a cooling rack.
- Serve warm with dipping sauces.
