Vegan Seitan Chicken

Instructions
- Mix the vital wheat gluten, chicken seasoning, garlic powder, onion powder, and salt in a large bowl.
- Add the water and mix until a dough forms.
- Knead the dough on a surface dusted with vital wheat gluten for 1 minute and stretch it into a large disc.
- Cut the disc into chicken cutlet-sized pieces.
- Lightly grease a steaming basket and place the seitan pieces inside without layering them.
- Steam the seitan for 30 minutes.
- Let the seitan cool at room temperature for 1 hour before refrigerating.
- To shred, place the seitan on a cutting board and use two forks to shred it.
- To roast, place the shredded seitan on a baking sheet and roast at 400°F for 15-20 minutes until golden brown.
- To pan-fry, heat oil in a skillet and cook the seitan for about 3-5 minutes per side until golden brown and crispy.
