Vegan Seitan Chicken

Ingredients

  • 2 cups vital wheat gluten
  • 1 tablespoon chicken seasoning
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon salt
  • 1 ½ cups water

Instructions

  1. Mix the vital wheat gluten, chicken seasoning, garlic powder, onion powder, and salt in a large bowl.
  2. Add the water and mix until a dough forms.
  3. Knead the dough on a surface dusted with vital wheat gluten for 1 minute and stretch it into a large disc.
  4. Cut the disc into chicken cutlet-sized pieces.
  5. Lightly grease a steaming basket and place the seitan pieces inside without layering them.
  6. Steam the seitan for 30 minutes.
  7. Let the seitan cool at room temperature for 1 hour before refrigerating.
  8. To shred, place the seitan on a cutting board and use two forks to shred it.
  9. To roast, place the shredded seitan on a baking sheet and roast at 400°F for 15-20 minutes until golden brown.
  10. To pan-fry, heat oil in a skillet and cook the seitan for about 3-5 minutes per side until golden brown and crispy.
