Instructions
- Mix the vital wheat gluten, chicken seasoning, garlic powder, onion powder, and salt in a large bowl.
- Add water and Worcestershire sauce, mixing until a dough forms.
- Knead the dough on a surface dusted with vital wheat gluten for 1 minute and stretch it into a disc.
- Cut the disc into chicken cutlet-sized pieces.
- Grease a steaming basket and place the seitan chicken inside, avoiding layering.
- Steam the chicken for 30 minutes and let it cool at room temperature for 1 hour.
- While the chicken chills, whisk together all vegan BBQ sauce ingredients in a small bowl.
- Preheat the grill to 400°F and brush each piece of chicken with BBQ sauce.
- Grill the seitan chicken for 3-5 minutes per side, brushing with more BBQ sauce to serve.
