Ingredients

The seitan chicken

  • 2 cups vital wheat gluten
  • 1 tablespoon chicken seasoning
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon salt
  • 1 cup water
  • 1 tablespoon vegan Worcestershire sauce

The vegan BBQ sauce

  • 1 cup ketchup
  • 3 tablespoons apple cider vinegar
  • 2 tablespoons brown sugar
  • 2 tablespoons molasses
  • 1 tablespoon coconut aminos or soy sauce
  • 1 tablespoon vegan Worcestershire sauce

Instructions

  1. Mix the vital wheat gluten, chicken seasoning, garlic powder, onion powder, and salt in a large bowl.
  2. Add water and Worcestershire sauce, mixing until a dough forms.
  3. Knead the dough on a surface dusted with vital wheat gluten for 1 minute and stretch it into a disc.
  4. Cut the disc into chicken cutlet-sized pieces.
  5. Grease a steaming basket and place the seitan chicken inside, avoiding layering.
  6. Steam the chicken for 30 minutes and let it cool at room temperature for 1 hour.
  7. While the chicken chills, whisk together all vegan BBQ sauce ingredients in a small bowl.
  8. Preheat the grill to 400°F and brush each piece of chicken with BBQ sauce.
  9. Grill the seitan chicken for 3-5 minutes per side, brushing with more BBQ sauce to serve.
