Ingredients

  • 1 ½ cups vegetable broth
  • 2 tablespoons olive oil or avocado oil
  • 1 ½ cups vital wheat gluten
  • 1 ½ cups chickpea flour
  • ¼ cup nutritional yeast
  • ½ teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt

Instructions

  1. 1. Combine all ingredients in a food processor and blend until a sticky mixture forms.
  2. 2. Let the dough rest for 10 minutes, then blend again briefly.
  3. 3. Divide the dough into 4 pieces.
  4. 4. For a loaf, wrap one piece in foil and steam for 30 minutes.
  5. 5. For strips, slice the cooled loaf into desired sizes.
  6. 6. For shredded seitan, shred the cooled loaf by hand.
  7. 7. For bites or nuggets, tear off pieces and steam for 10 minutes.
  8. 8. Store the seitan in the fridge or freeze for later use.
