Homemade Seitan

Ingredients

Broth

  • 6 cups water
  • 1 tablespoon garlic powder
  • 3 tablespoons seasoning blend
  • ¼ teaspoon salt
  • 3 sprigs parsley
  • 1 teaspoon turmeric
  • 1 clove garlic
  • 1 tablespoon soy sauce
  • 1 tablespoon balsamic vinegar
  • 2 tablespoons tomato paste

Dough

  • cups water
  • ¼ cup soy sauce
  • 3 tablespoons tomato paste
  • teaspoons miso paste
  • 2 teaspoons black pepper
  • 2 teaspoons chili powder
  • 2 teaspoons garlic powder
  • 2 cups vital wheat gluten
  • 2 tablespoons nutritional yeast

Instructions

  1. Prepare the broth by mixing water, garlic powder, seasoning blend, salt, parsley, turmeric, and garlic in a large pot.
  2. Heat the broth and add soy sauce, balsamic vinegar, and tomato paste, then mix well and bring to a simmer.
  3. For the dough, blend water, soy sauce, tomato paste, miso paste, black pepper, chili powder, and garlic powder until well combined.
  4. Add the blended mixture to a mixer or mix by hand.
  5. Measure out vital wheat gluten and add it to the mixer along with nutritional yeast.
  6. Mix until well combined and the texture becomes shaggy.
  7. Knead the dough for 1 minute.
  8. Slice the dough into desired shapes.
  9. Drop the seitan pieces into the simmering broth.
  10. Cover and cook over low heat for about 1 hour, stirring occasionally.
  11. Once cooked, the seitan will become fluffy and float to the surface. Remove and serve with sauce as desired.
