Mason Jar Salads with Yogurt Dressing

Ingredients

The dressing

  • 4.4 ounce container of yogurt (siggi’s strawberry & rhubarb whole-milk yogurt)
  • ¼ cup olive oil
  • 1 to 2 tablespoon lemon juice
  • 2 tablespoon red wine vinegar
  • 1 to 2 tablespoon honey
  • 1 to 2 tablespoon sesame seeds
  • ½ teaspoon ground ginger
  • to taste salt/pepper

The salads

  • 2 to 4 tablespoon Sesame Yogurt Dressing (divided)
  • 1 cup mixed greens
  • 1 cup chopped Brussels sprouts
  • 1 cup cooked quinoa
  • 2 to 4 slices orange (cut 1 inch thick)
  • 1 cup microgreen sprouts
  • 1 whole summer squash (spiralized or cut julienne)
  • cup roasted chickpeas
  • to taste cilantro (for garnish)
  • 1 wedge lemon or lime (for garnishing)
  • to taste salt/pepper

Instructions

  1. Whisk all dressing ingredients together in a bowl and store in an airtight container.
  2. Layer half the salad ingredients into each mason jar, starting with the dressing at the bottom.
  3. Add quinoa, mixed greens, orange slices, chickpeas, Brussels sprouts, squash, and top with herbs and sprouts.
  4. Season with salt and pepper as desired.
  5. Shake the jar before serving and pour the contents into a bowl or plate.
