Mediterranean Mason Jar Salads

Ingredients

The Salad

  • 4 cups arugula or other leafy greens
  • 2 cups cherry tomatoes, halved
  • 2 cups cucumber, diced
  • 2 cups cooked quinoa
  • 1 15 oz can chickpeas, drained and rinsed
  • ½ medium red onion, diced
  • ¼ cup fresh parsley, chopped
  • to taste salt and pepper

The Lemon Garlic Dressing

  • ¼ cup olive oil
  • 3 Tbsp fresh lemon juice
  • 1 tsp lemon zest
  • 2 Tbsp red wine vinegar
  • 3 cloves garlic, minced
  • 1 tsp cumin
  • ¼ tsp black pepper

Instructions

  1. Whisk together the dressing ingredients in a small bowl.
  2. Distribute the dressing evenly among 4 mason jars, placing it at the bottom.
  3. Add chickpeas, red onion, and parsley to each jar and mix slightly.
  4. Layer the jars with tomatoes, cucumber, quinoa, and top with arugula.
  5. Store in the fridge until ready to eat. Serve by dumping out or shaking the jar.
