Mediterranean Mason Jar Salads

The Salad

The Lemon Garlic Dressing

Instructions
- Whisk together the dressing ingredients in a small bowl.
- Distribute the dressing evenly among 4 mason jars, placing it at the bottom.
- Add chickpeas, red onion, and parsley to each jar and mix slightly.
- Layer the jars with tomatoes, cucumber, quinoa, and top with arugula.
- Store in the fridge until ready to eat. Serve by dumping out or shaking the jar.
