Mason Jar Salad

Ingredients

  • 1 pound grilled chicken breast, cut into bite-sized pieces (or edamame)
  • 1 cup cooked quinoa
  • 1 cup cherry tomatoes
  • ¼ cup vinaigrette dressing (or fresh lemon juice, olive oil, and honey)
  • 1 cup frozen corn, thawed
  • ¼ cup shredded Parmesan cheese
  • 4 cups arugula, chopped
  • ½ cup pomegranate seeds or raisins
  • ¼ cup roasted pepitas (shelled pumpkin seeds)

Instructions

  1. Layer the ingredients in four 16-ounce jars starting from the bottom: 4 ounces of grilled chicken, ¼ cup quinoa, ¼ cup tomatoes, 1 tablespoon dressing, ¼ cup corn, 1 tablespoon Parmesan, 1 cup arugula, 2 tablespoons pomegranate seeds, and 1 tablespoon pepitas.
  2. Cover each jar with a lid and refrigerate.
  3. When ready to eat, shake the sealed jar to combine the ingredients.
