Tex Mex Quinoa Mason Jar Salad

Instructions
- Combine all dressing ingredients in a food processor and blend until smooth.
- Adjust the thickness of the dressing with more vinegar or Greek yogurt as needed.
- Layer the mason jar starting with about 3 tablespoons of dressing at the bottom.
- Add a handful of spinach, followed by ¼ cup of tomatoes, ½ cup of quinoa, ¼ cup of black beans, ¼ cup of corn, and ½ avocado, sliced.
- Repeat the layering process in four different mason jars.
- Store the mason jars in the refrigerator until ready to eat.
