Ingredients

Green Goddess Salad

  • 1 cup quinoa (cooked)
  • 1 cup cucumber (chopped into small quarters)
  • cup chickpeas
  • 2 tbsp capers
  • 1 tbsp pumpkin seeds
  • 1 tbsp sunflower seeds
  • 2 – 3 cups spinach + mixed greens
  • to taste salt + pepper

Dressing

  • ½ cup Greek yogurt
  • ½ cup curly parsley
  • ½ cup fresh cilantro
  • small handful fresh basil
  • 1 ½ tbsp chives
  • 1 ½ tsp capers
  • 1 tsp dried dill
  • ¾ tsp garlic powder
  • 1 tbsp olive oil
  • dash cracked pepper
  • pinch salt
  • juice of half lemon

Instructions

  1. Cook the quinoa to your preferred doneness and let it cool slightly.
  2. Organize the remaining ingredients and set aside.
  3. Blend all dressing ingredients in a blender until smooth.
  4. Layer the ingredients in a 750ml / 26oz jar and pour the dressing on top.
  5. Refrigerate until ready to eat.
