Instructions
- Prepare the dressing by combining olive oil, vinegar, lemon juice, garlic, mustard, oregano, salt, and pepper in a jar and shake well.
- Arrange three quart-sized mason jars and pour 3 tablespoons of dressing into each jar.
- Layer the ingredients in each jar in the following order: diced onion, garbanzo beans, cucumber, cherry tomatoes, olives, feta, and lettuce.
- Secure the lids on the jars and store them in the fridge for up to 3 days.
- To serve, pour the contents of the jar into a bowl and stir to coat with dressing.
