Ingredients

Salad Dressing

  • 5 tablespoons extra-virgin olive oil
  • 3 tablespoons red wine vinegar
  • 1 tablespoon fresh lemon juice
  • 1 clove garlic
  • 1 teaspoon Dijon mustard
  • ½ teaspoon dried oregano
  • ½ teaspoon fine sea salt
  • ¼ teaspoon ground black pepper

Salad Assembly

  • 1 small red onion
  • 1 15 oz. can garbanzo beans
  • 1 English cucumber chopped
  • 1 pint cherry tomatoes
  • ½ cup Kalamata olives
  • 3 ounces feta cheese
  • 1 large head romaine lettuce

Instructions

  1. Prepare the dressing by combining olive oil, vinegar, lemon juice, garlic, mustard, oregano, salt, and pepper in a jar and shake well.
  2. Arrange three quart-sized mason jars and pour 3 tablespoons of dressing into each jar.
  3. Layer the ingredients in each jar in the following order: diced onion, garbanzo beans, cucumber, cherry tomatoes, olives, feta, and lettuce.
  4. Secure the lids on the jars and store them in the fridge for up to 3 days.
  5. To serve, pour the contents of the jar into a bowl and stir to coat with dressing.
