Zucchini and Chorizo Cheese Toast

The toppings

yellow squash, shaved into 2 ½ to 3-inch lengths

green zucchini, shaved into 2 ½ to 3-inch lengths

peeled and shaved into thin slices

ground pork chorizo
Instructions
- Melt butter in a large sauté pan over medium heat and cook the red onion until limp.
- Transfer the onion to a bowl and set aside.
- In the same pan, cook the chorizo until fully cooked, breaking it into small pieces, then drain on paper towels.
- Split the ciabatta loaf in half and spread each half with butter, then sprinkle with garlic salt.
- Top the bread with Gouda, followed by the cooked chorizo, squash shavings, and cooked onion.
- Season with kosher salt and pepper, then broil until the cheese melts.
- Slice into pieces, garnish with thyme, and serve.
