Instructions
- Make the chipotle mayo by mixing mayo, chopped chipotle pepper, lime juice, and salt in a small bowl.
- Cook the sliced chorizo in a skillet over medium-high heat until lightly browned, about 3-4 minutes, then drain on paper towels.
- Butter one side of each bread slice and spread the unbuttered sides with chipotle mayo. Layer cheese, chorizo, jalapeños, and more cheese on the mayo side, then close the sandwiches.
- Cook the sandwiches in the skillet over moderate heat until the bread is golden brown and the cheese is melted, flipping once. Cut in half and serve.
