Chorizo Grilled Cheese Sandwich

Ingredients

Chipotle Mayo

  • ¼ cup light mayo
  • 1 piece chipotle pepper in adobo sauce, finely chopped
  • 1 teaspoon fresh lime juice
  • a pinch salt

Grilled Cheese Sandwich

  • 6 ounces chorizo sausage, thinly sliced
  • 4 slices sturdy bread (sourdough recommended)
  • 1 small jalapeño, thinly sliced
  • 4 ounces Cheddar cheese, thinly sliced

Instructions

  1. Make the chipotle mayo by mixing mayo, chopped chipotle pepper, lime juice, and salt in a small bowl.
  2. Cook the sliced chorizo in a skillet over medium-high heat until lightly browned, about 3-4 minutes, then drain on paper towels.
  3. Butter one side of each bread slice and spread the unbuttered sides with chipotle mayo. Layer cheese, chorizo, jalapeños, and more cheese on the mayo side, then close the sandwiches.
  4. Cook the sandwiches in the skillet over moderate heat until the bread is golden brown and the cheese is melted, flipping once. Cut in half and serve.
