Gourmet Grilled Cheese

Ingredients

Green Harissa

  • 2 pieces green Anaheim peppers or 1 poblano
  • 2 cloves garlic
  • 2 tablespoons lemon juice
  • ½ teaspoon ground cumin
  • ½ teaspoon ground coriander
  • ½ teaspoon sea salt
  • ½ teaspoon honey or maple syrup
  • ¾ cup cilantro
  • ¼ cup pepitas
  • 2 tablespoons extra-virgin olive oil
  • to taste freshly ground black pepper

Grilled Cheese

  • 8 slices sourdough bread
  • a few handfuls spinach leaves
  • 2 to 3 cups grated havarti cheese
  • for grilling extra-virgin oil

Instructions

  1. Char the peppers until the skin is blackened, then cover and let steam for 10 minutes.
  2. Remove the stems from the peppers and blend them with garlic, lemon juice, cumin, coriander, salt, honey, cilantro, pepitas, and black pepper in a food processor.
  3. Drizzle in olive oil and process until smooth to make the green harissa.
  4. Slather the green harissa on the insides of each slice of sourdough bread.
  5. Assemble the sandwich with spinach leaves and grated havarti cheese.
  6. Preheat a skillet over medium heat, brush the outside of the sandwich with olive oil, and grill until the cheese melts and the bread is golden brown.
