Gourmet Grilled Cheese

Ingredients

Roasted Tomatoes

  • 6-8 pieces cherry tomatoes, halved
  • 2 Tbsp. olive oil
  • 1 pinch salt
  • 1 pinch pepper
  • 1 pinch sugar
  • 1 pinch crushed red pepper

Sandwich

  • 1 Tbsp. unsalted butter
  • 1 Tbsp. shallots, minced
  • 1 pinch salt
  • 1 pinch pepper
  • 2 slices sandwich bread
  • 6 slices extra sharp cheddar
  • 6 slices fresh mozzarella
  • ½ Tbsp. unsalted butter (for bread)

Instructions

  1. Preheat the oven to 350°F (175°C) and prepare the tomatoes by halving them and placing them cut-side down in a shallow dish.
  2. Sprinkle sugar, salt, pepper, and crushed red pepper over the tomatoes, then drizzle with olive oil.
  3. Bake the tomatoes for 15-20 minutes while preparing the sandwich.
  4. Melt butter in a small pan over medium heat and add minced shallots, cooking until tender and fragrant.
  5. Remove shallots and spread them on the inside of each slice of bread.
  6. In the same pan, place one slice of bread (shallot side up) and layer with cheddar slices, allowing them to melt.
  7. Add mozzarella on top of the cheddar and then place the roasted tomatoes on top, pressing them down slightly.
  8. Cover with the second slice of bread (shallot side down) and flip to cook the other side for 3-4 minutes.
  9. Remove from the pan, let sit briefly, then slice and serve hot.
