Spicy Chorizo Patty Melt

Ingredients

The patties

  • 1 lb fresh chorizo or other spicy sausage
  • 2 Tbsp vegetable oil
  • 1 medium red onion
  • 1 cup sliced pickled jalapeƱos

The vegetables

  • 2 medium poblano chiles

The bread and cheese

  • 8 slices sourdough bread
  • 1 lb Oaxaca cheese or fresh mozzarella

For spreading

  • to taste mayonnaise

Instructions

  1. Divide the chorizo into 4 equal portions and flatten into patties.
  2. Heat vegetable oil in a skillet and cook the patties until browned, about 2 minutes per side.
  3. In the same skillet, cook the sliced red onion with salt until softened, then add sliced poblano chiles and pickled jalapeƱos, cooking until the poblanos are softened.
  4. Assemble the sandwiches by layering cheese, patties, onion mixture, and more cheese between slices of sourdough bread, spreading mayonnaise on the top slice.
  5. Cook the sandwiches in the skillet, pressing down with a heavy pan, until golden brown on both sides and the cheese is melted.
