Instructions
- Divide the chorizo into 4 equal portions and flatten into patties.
- Heat vegetable oil in a skillet and cook the patties until browned, about 2 minutes per side.
- In the same skillet, cook the sliced red onion with salt until softened, then add sliced poblano chiles and pickled jalapeƱos, cooking until the poblanos are softened.
- Assemble the sandwiches by layering cheese, patties, onion mixture, and more cheese between slices of sourdough bread, spreading mayonnaise on the top slice.
- Cook the sandwiches in the skillet, pressing down with a heavy pan, until golden brown on both sides and the cheese is melted.
