Chorizo and Peppadew Pepper Grilled Cheese

Gran Queso cheese (or Spanish-style Manchego), grated

cooked chorizo sausage

pickled peppadew peppers, sliced
Instructions
- Spread butter on one side of each slice of bread.
- Flip the bread buttered side down and repeat with the other slices.
- Sprinkle the unbuttered sides of the bread with grated cheese, then add chorizo, smoked paprika, and sliced peppadew peppers.
- Top with more cheese and the top slice of bread butter side up.
- Place the sandwich in a non-stick fry pan over medium-high heat and cover with the other slice of buttered bread.
- Cook for 3-4 minutes until golden, then reduce heat to medium and flip the sandwich.
- Cook for another 2-3 minutes until the bread is golden and cheese has melted.
- Repeat the process with the remaining ingredients to make another sandwich.
