Chorizo and Peppadew Pepper Grilled Cheese

Ingredients

  • 4 slices sturdy white bread
  • 2 tablespoons butter
  • 6 ounces Gran Queso cheese (or Spanish-style Manchego), grated
  • ½ cup cooked chorizo sausage
  • 2 pinches smoked paprika
  • 6 pieces pickled peppadew peppers, sliced

Instructions

  1. Spread butter on one side of each slice of bread.
  2. Flip the bread buttered side down and repeat with the other slices.
  3. Sprinkle the unbuttered sides of the bread with grated cheese, then add chorizo, smoked paprika, and sliced peppadew peppers.
  4. Top with more cheese and the top slice of bread butter side up.
  5. Place the sandwich in a non-stick fry pan over medium-high heat and cover with the other slice of buttered bread.
  6. Cook for 3-4 minutes until golden, then reduce heat to medium and flip the sandwich.
  7. Cook for another 2-3 minutes until the bread is golden and cheese has melted.
  8. Repeat the process with the remaining ingredients to make another sandwich.
